This shocking list of items that Israel permits and prohibits into Gaza was compiled by the Israeli human rights organization, Gisha, based on reports by those involved in the transfer of goods into Gaza. Israel has refused to divulge the official list of products on the grounds that it threatens national security. You can read about Gisha's legal efforts to force the Israeli government to make its procedures transparent on the Gisha website. After denying that official documents exist, in May 2010 in response to Gisha's legal request for the information, Israel acknowledged the existence of four documents but claimed that concern for national security dictated the continued secrecy of the documents.
